Hello Everyone,

Last night's dinner, Strawberry-Spinach Salad was a hit at our house. What to do with leftover spinach? Well, here's a good and easy and tasty recipe that is always a sure winner....enjoy!!

Chicken Spinach Enchilada Casserole
Serves 3 (can easily be doubled)

2 chicken breasts
1/2 lb. fresh spinach
1/2 large coarsely chopped onion
2 T. butter
1/2 c. sour cream
1 c. chopped green chili
6 oz. grated cheddar cheese
6 oz. grated Monterey Jack cheese
5-6 6" tortillas
1/2 t. cumin
1/2 t. garlic powder

Poach the breasts for 20 mts.. Allow to cool. Remove meat from bones and cut into bite-size pieces. Set aside.

Saute onion in butter til limp. Remove skillet from heat and add spinach and cover. Allow spinach to steam in skillet for 15 mts. Add the chili, sour cream, chicken, cumin and garlic and blend well. Line a greased casserole with a layer of tortillas, layer chicken mixture on and top with a layer of cheddar and Jack cheeses. End with a layer of tortillas covered with a layer of cheeses. Bake at 350 for 30 mts. Delicious!!
