1/2lb frozen spinach,thawed 2 sheets puff pastry 1/3 cup prepared pesto 1/3lb feta cheese, crumbled 1/4cup finely chopped fresh basil leaves 1/2lb cherry tomatoes, halved 1/4 cup coarsely grated parmesan cheese 1 tsp. craked black pepper
Drain spinach then, using hands, squeeze excess liquid from spinach; chop roughly. Oil 2 oven pans; place 1 sheet of pastry on each. Fold edges of pastry inward to form 1/2 inch border; pinch corners of bases together. Divide pesto between bases; spread evenly to cover base. Top each with spinach, feta cheese, basil and tomatoes; sprinkle with parmesan cheese and pepper. Cook in 450 degrees oven about 15 minutes or until crisp and browned lightly. -serves 4 to 6- |
