This casserole is so easy and delicious. I'm going to be making it again this weekend and was thinking that maybe some of you would like to have the recipe.i don't think I've posted it before. CABBAGE ROLL CASSEROLE 1 small head cabbage 1 1/2 lbs. ground beef, turkey or sausage 2 cloves garlic, diced 1 large onion, diced salt and pepper to taste 1/3 cup regular rice, uncooked, or 1 cup minute rice, uncooked 1lb.jar or bag of sauerkraut 2 large cans whole tomatoes, chopped Chop cabbage into bite size pieces and place in bottom of large deep casserole. Brown the meat, add onion, garlic and salt and pepper, add rice and one can of the chopped tomatoes. Mix together well and pour over cabbage. Spread sauerkraut on top and cover with second can of tomatoes. Bake uncovered at 350 for 20 minutes. Cover and continue baking for another hour or until the rice is tender. This makes a lot. I usually serve it with a tossed salad and some good crusty bread. Great peasant food that really warms your tummy on a cold winter day.
