for you would be to make a large beef or pork roast or turkey breast on Sunday. On Monday, you could cut the leftover beef into strips and have fajitas. On Tuesday, you could dice some of the leftover beef and put in beef stroganoff. On Wednesday, if you have any left, you could make hot roast beef sandwiches. I do this quite often. I make a big lunch on Sunday and then we have different dishes from the leftovers.

Another idea would be to fix a large pork loin for one meal. For another, slice some of the pork and pour some glaze on the top for an open-faced pork roast sandwich. Scalloped potatoes are delicious when cubed pork is added. Barbecued pork sandwiches are great especially when served with soup for a quick supper.

If you bake a ham, you could make Ham and Cheese Pie--I've posted it somewhere here at TKL--with some of the leftovers. Another idea would be to make ham casserole. With the bone, you could make blackeyed, pinto, northern, or lima beans using the CrockPot. These are delicious and no trouble at all!

My daughter loves turkey and chicken, so I fix both often. One way to make a turkey breast is to put it in one of the Reynolds Cooking bags along with celery, onions, white wine, bell peppers, salt and pepper, and a little flour. Make sure to punch holes in the top so the bag won't explode. This turkey is so moist and yummy. With the lefotvers, I make turkey pot pie and turkey noodle soup. Both are easy and I've posted the recipes for both here at TKL. Hot turkey sandwiches with leftover gravy would be another quick, but great, meal.

Taco salad, made with lean ground beef, taco seasoning, lettuce, tomatoes, cheese, onions, plain taco chips, or large Fritos, and topped with sour cream is always welcome at our house.
