Hello Friends,

Today is a day for football games, so I got up early, made breakfast, read the Sunday news and then began my cooking so that we could eat while watching the Bucs game. We will be having Lasagna Florentine, Pepperidge Farm Garlic Bread, Greens and Tomatoes Salad and Banana SOur Cream Walnut Loaf. Enjoy!

Lasagna Florentine

I have been making this since 1994 and it is delicious!!

2-3 lbs. lean ground round
2 med. onions, chopped
2 16 oz. cans stewed tomatoes
18 oz. tomato paste
3 bay leaves
salt and peper to taste
3 cloves garlic, minced
1 T. basil
1/2 t. crushed red pepper
1/2 t. oregano
2 10 oz. pkgs. frozen chopped spinach
4 c. grated mozzarella cheese, divided
1 c. grated Parmesan cheese, divided
8 oz. lasagna noodles

Sauce:
Brown beef and onion in large skillet. Add tomatoes, paste, bay leaves, salt, pepper, garlic, basil and crushed red pepper. Simmer 1 hour. Remove from heat and add oreganop.

Spinach Mixture:
Cook spinach accord. to dir. Drain, add 3 c. mozzarella and 1/2 c. Parmesan. Mix well.

Pasta:
Cook according to dir. Drain, place in pan of cool water. Pat dry before layering.

Assembly:
Layer ingred. in a deep dish lasagna pans. First, spread a small amt. of sauce in the pan. Then layer pasta, spinach, and meat sauce and continue ending with meat sauce. Sprinkle remaining 1 c. mozzarella and 1/2 c. Parmesan on top. Bake at 350 for 45 mts.

Greens and Tomatoes Salad

Romaine lettuce torn into bite size pieces
2 tomatoes, cut up into chunks
salt and pepper to taste
garlic salt
balsamic vinegar
olive oil
basil leaves, cut up

Put romaine in large bowl, sprinkle with tomatoes and basil leaves, drizzle olive oil and balsamic all over and season with salt and pepper and garlic salt. Toss to blend.Banana Sour Cream Walnut Loaf

This is a nice dense loaf just like the gourmet bakeries sell!!

2/3 c. softened butter
1 1/3 c. sugar
2 3/4 c. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
2 eggs beaten
1 1/2 c. mashed bananas
1/2 c. sour cream
1 c. chopped nuts
Cream butter, gradually add sugar, beat on med. speed. Combine flour and next 3 ingred. Mix well. Combine eggs, bananas and sour cream. Add flour misture to creamed mixture alternating with banana mixture, beginning and ending with flour. Stir in nuts. Pour batter into greased loaf pan, bake at 350 1 hour and 15 mts.
