Oven Roasted Root Veggies

1 Tbsp olive oil
3/4 lb.small red potatoes, quartered
1 large sweet potato, peeled/cut into 3/4" chunks
4 carrots, sliced into 1/2" chunks
2 parsnips, peeled, sliced into 1/2" chunks
2 onions, cut into 3/4" chunks
1/2 c. chicken broth
1 Tbsp. tomato paste
2 cloves garlic, crushed
1/2 tsp. thyme, crumbled
s and p

Preheat oven to 400º
Place oil in roasting pan and heat in oven(5 mins)
Add veggies
whisk broth,paste, garlic, thyme, s and p together and pour over veggies, stirring till mixed well
Bake, stirring a few times, till tender (about 45 minutes
Serve hot, or at room temp
