Crunchy Oven Baked Chicken Breasts
3/4 cup seasoned dry bread crumbs 1/2 cup grated Romano cheese 1/2 cup toasted finely chopped walnuts (I use Pecans) 2 eggs, beaten 1 cup buttermilk 4 skinless, boneless chicken breast halves 3 Tablespoons butter, melted
Preheat oven to 375 degrees. Combine bread crumbs, cheese and walnuts in a bowl. In a shallow dish, combine eggs and buttermilk; mix well. Dip each piece of chicken in crumb mixture, then in buttermilk mixture, then again into crumbs. Place in a 13x9 inch pan. Drizzle with butter. Bake 30 to 35 minutes, or until chicken is tender when pierced with a fork.
Debbie: These are good taken right out of the oven or allow them to sit a while, even cold they are great. Enjoy.
