Just like Cali, I can't find either Mexican cornbread, or the self rising cornmeal. But that's OK. We do have Jiffy and other brand of cornbread mix, and I'm sure that a made from scratch would work also. My question - what is in the Mexican mix that makes it Mexican? Is it chopped chilies, or chili powder? Are the spices an important part of the broccoli cornbread? thanks in advance, love your recipes!
