I hope this is the right area to post this recipe which is so easy and deliscious. I hope other readers like it too, as I have enjoyed their entries.

Spinach and Lettuce Salad

Dressing:
1/3 c. frozen orange juice concentrate
2/3 c. oil (not olive oil - use veg or canola)
1/4 tsp. salt
1 T. of vinegar
1/2 c. sugar
1/4 tsp. dry mustard
a dash of tabasco sauce

Method:
Combine all the dressing ingredients and mix well in a jar. Chill
Prepare a salad bowl of lettuce and spinach leaves. Top with mandarin oranges, sliced avocado and thin French Fried Onion Rings. Pour the dressing on top of the greens just before serving. This salad is a hit even with spinach haters.
