Barbeque Chicken Pasta.......a dish I never get tired cooking or eating!!
Boneless chicken breasts, cut into 1 1/2" chunks corn oil red onion, coarsely chopped Bell pepper, coarsely chopped fresh garlic, chopped cilantro leaves, chopped green onions, chopped
Favorite tomato sauce (jar is acceptable, however homemade is best) Favorite barbeque sauce Gouda cheese, shredded Provalone cheese, shredded Parmesan cheese, grated Rigattoni pasta cooked al dentePer portion: In a little corn oil heated in a non-stick skillet, stir-fry cubed chicken (about 5 chunks per person), red onion, garlic, bell pepper, cilantro & green onions (approx 2 tabsp of each veg. and a teasp. minced garlic per serving.) Cook until chicken is almost cooked through. Add equal parts tomato sauce and bbq sauce to make the sauce. Stir and simmer until heated through. Pour over cooked, drained pasta; toss well and place in individual serving bowls. Top each bowl with 3 tabsp of each shredded cheese, a little parmesan cheese and a sprinkling of extra chopped cilantro!!
