Hello Everyone,

Tonight we will be enjoying a light meal...Popeye's Favorite Spinach Salad and for dessert, Homemade Strawberry Shortcake. I like it with the spongecake I make but my husband likes it with biscuits.

Mom and I went to a local Strawberry Farm and bought half a flat for $4.00! They are the juiciest berries that have graced our table this year!

Popeye's Favorite Spinach Salad

1 bag of spinach
4 strips bacon, cooked crisp and crumbled
2 hard-boiled eggs, peeled and chopped
1 c. sliced fresh mushrooms

Dressing:

1 c. veg. oil
1/4 c. red wine vinegar
1/4 c. lemon juice
1 t. salt
1/2 t. pepper
7 t. sugar
1 t. dry mustard
1 garlic clove, minced

Chill spinach with other ingred. layered, Before serving, add all dressing ingred. in a jar, shake and drizzle over.Homemade Strawberry Shortcake
(May substitute biscuits for the shortcake)

4 pints fresh strawberries
1/2 c. sugar

Wash and remove the hulls, slice 3 pints of the berries into a large Tupperware round container, add the sugar and stir well. Then with a masher, mash the berries leaving a few berries intact. Then I slice the last pint into the mashed mixture and mix well. Refrigerate til ready to use.

For the Cake:

1 c. sugar
1 c. flour
3 eggs, separated
1 t. vanilla
1 t. baking powder
1/2 t. nutmeg

Beat the egg whites til foamy. Add egg yolks, sugar, flour, milk, vanilla, nutmeg and baking powder. Butter a 9x13 pan and pour in batter. Bake at 350 for 45 mts.When cooled, cut large squares that will fit each indiv. bowl, put 2 ladlefuls of berries over and top with whipped cream.
