Good Morning Everyone!

A beautiful morning in Central Florida with a forecast of some scattered showers this afternoon, yeah!!

I am posting early because we have some more leaves to bag...yesterday Mom bagged 27 bags, can you believe that? In case you are wondering, we live under 7 gorgeous live oak trees.

Last night we went to Home Depot to get edging for the gardens and bought a pink mandevillia and a sweet bush with tightly curled mini flowers that smelled of jasmine. The label says "Arabian Jasmine Bush". The flowers are extremely fragrant and look like miniature camelias, truly a sight!

This is it, no more bushes, we are done friends! The next project is opening the pool up and cleaning and sealing the deck. After that, watch out, I will be sitting out there with books and magazines and enjoying being the Queen of the Jungle!

Tonight we will be enjoying a delighful and light meal: Marina Bay Salad with Mango Chutney Dressing and Blueberry Muffin. This salad is served at the Marina Bay Hotel in Ft. Lauderdale, Fl. I had it for the first time about 15 years ago when we lived there. My DH took me there for an anniversary and I had to have the recipe. It is a delicious salad!

Marina Bay Salad with Mango Chutney Dressing

2 main servings

6 c. torn pieces of mixed greens
6 oz. small shrimp, cooked, peeled and deveined
1 (11 oz.) can mandarin oranges, chilled and drained
1 c. toasted coconuts *
1 c. seasoned croutons
Mango Chutney Dressing

Arrange greens on plate. Top with shrimp, oranges, coconut and croutons. Serve with Mango Chutney Dressing on the side.

* Toasted coconut, spread on skillet and over med. heat stirring, toast til nicely browned.

Mango Chutney Dressing

makes 2 1/2 c.
1 c. mayo
1/2 c. papaya or mango chutney**
1/2 c. cider vinegar
2 t. lemon juice
1 T. horseradish
1 t. worcestershire
1 t. A-1 Steak Sauce
1/4 t. tabasco
1 t. sugar
1 t. white pepper
salt to taste
1 c. oil

In a food processor, combine all ingred. except oil. Slowly pour in oil while processing. Refrigerate til ready to use.

**Use Major Grey's Mango Chutney
