This recipe comes from a great cookbook one of my many Aunts gave me, its called Stolen Recipes and Saucy Stories by Kay Morse, Kay Morse hails from Oregon as do so I especially enjoy this cookbook. I have made so many recipes from it but this is one of my favorites. It has turned out perfectly every time I've made it which has been many. I can never find savory so I use poultry seasoning instead. No-Peek Baked Chicken From: Stolen Recipes and Saucy Stories
Ingredients: 1 box prepared long grain wild rice with herbs mix 2 cans cream of mushroom soup 1 can cream of broccoli soup 1 cup plus 6 ounces cold water 1 cup long grain rice 1 teaspoon dried parsley 1 teaspoon savory (or poultry seasoning) 1 can sliced water chestnuts 1 clove garlic, minced 4 to 6 boneless, skinless chicken breast halves 1 package onion soup mix, divided
* Preheat oven to 350 degrees. * Combine all ingredients except chicken and half package of soup mix in a 9 x 13 inch baking dish. Add Chicken pieces and top all with remaining dry soup mix. Bake covered for 2 hours. Dont peek! Serves 4 to 6
Notes: I usually add an extra garlic clove and an extra can of water chestnuts as I am a big fan of both of them. You can use 4,5 or 6 chicken breasts depending on your crowd. Absolutly wonderful!
