Thanks for such a wonderful story along with the recipes.
I love reading your posts. When you mentioned
El Yunque, the rainforest, it brought back
memories of April 1986 when I went to Puerto Rico.
I loved my week there. My friend & I stayed in a
little B&B far from the tourist stuff. We took
city buses to the real tourist attractions.

One day we took a ride on horses to Loquillo Beach.
It was fabulous. So memorable. We took a trip
to El Yunque and it was great too. So beautiful.

Thanks for the memories.

A question - do you have a recipe for
the plantains that are stuffed with meat and
rolled and fried. Boy, I had those in a little
shack on the side of the road on the way to
Loquillo Beach and they were sooo good. I
would love to make them for myself.
