Hi Marguerite, Welcome to TKL & to Asian cooking.I enjoy Asian food. I have many Chinese recipes, & a few Thai recipes, but I only have this one Japanese recipe (at least the recipe states that it is Japanese). I do not know how authentic it is & I have not made it, so I don't know how good it is. I will look through some of my cookbooks & see if I can find some more Japanese recipes.
Miso Soup
1/3 cup dark miso 1/2 pound tofu, cut into 1/2-inch cubes 1/4 cup minced carrots 1/4 cup peeled & minced scallions
Bring 6 cups of water to a boil in a saucepan. Turn heat to low, & mix about 1/2 cup water with miso in a blender. Blend until smooth. Pour miso mixture back into simmering water, & add the tofu & carrots. Tun off the burner. Stir twice & let the mixture sit just long enough to heat the tofu through. Add scallions & serve. Serves 4.
