yuca that you just mentioned are delicious. And let me tell you something. About the block of grated yuca that you just mentioned, I had used it frequently, instead of the fresh one and it is not that bad. You defrost it, press it with the help of a cheese cloth to take out the starch, then you add some milk to reconstitute the fresh flavor, let it half an hour with the added milk and then, press it again through a clean cheese cloth. Then it tastes like freshly grated yuca and you can proceed with any of those wonderful recipes that both of us are used to. Try it and you will be surprised. It is worth the try!
