Guava salsa with grilled line fish ********************************************
6 x 150 - 200 g(6-8 ozs) line fish fillets olive oil coriander sprigs
SALSA ****** 5 ripe guavas, peeled, seeded and diced 1 large ripe tomato, skinned, seeded and diced 6 spring onions, sliced 25 ml (5 tsp) chopped coriander 2 green chillis, seeded and chopped 125 ml (1/2 cup) olive oil 15 - 30 ml (1 - 2 tbsp) lemon juice salt and milled pepper to taste 2 - 5 ml (1/2 - 1 tsp) sugar
Serves 6
SALSA: Mix all ingredients.
Grill fish.
Spoon salsa over, drizzle with olive oil and top with coriander sprigs.
