Not really a recipe but I use 3/4 cup grits to 2-1/4 cups water. Cook on HIGH for 3 minutes, remove from microwave, whisk well, put back in and cook again for 3 minutes, uncovered, on HIGH. Check again. If not done, stir well and cook again for another 3 minutes. Always uncovered.
Should work. I've done that with cornmeal, polenta and such. Would seem to work just as well, with some experimentation.
