Good Morning Everyone,

It is a real pretty day again and one that entices me to go out and do a little weeding around my sweet herb garden. I found an adorable victorian-era white wicker childs chair without arms in a garage sale for $3.00!! Perfect for placing among the herbs with a pretty plant on its seat.

Yesterday while food shopping I came upon gorgeous salmon fillets on sale...had to take them! I'm going to serve them with Orzo w/Spinach and Sweet Red Pepper and a nice Tomato Salad.

Broiled Salmon w/Tzatiki Sauce

serves 2

2 salmon fillets
1 c. Hellman's Citrus Splash Tangerine-Balsamic Dressing
3 garlic cloves, minced
1 t. dried thyme
1/2 t. ground coriander
salt and pepper

Place fillets in a container that has a lid. Pour the dressing over, crush the garlic over them, and sprinkle the spices on. Turn fillet on other side to coat well. Cover and hake a little. Refrigerate for 4 hours or over nite is better.

Broil for about 8-10 minutes. Baste using marinade. Serve on plate with a dollop of Tzatziki Sauce.

Tzatziki Sauce

2 garlic cloves, minced very finely
2-3 TBSP extra virgin olive oil
Juice of on fresh lemon
pinch of salt
2 cups plain yogurt
1 medium cucumber, peeled and seeded and finely chopped
1/2 tsp. oregano Mix garlic with olive oil. Using the edge of a fork, continue mixing garlic and oil while adding lemon juice and salt. Add yogurt, cucumber and oregano and mix well. Cover and chill for at least 4 hours for flavors to combine. Serve with Broiled Salmon.

Can also be served with pita bread triangles or fried zucchini, corn fritters, or as a refreshingly cool dip for fresh vegetables such as carrots, broccoli, celery, red or green bell pepper slices and cucumbers..

Orzo with Spinach and Sweet Red Bell Pepper

1 c. orzo
1 package frozen chopped spinach, thawed and drained
2 T. olive oil
1/2 c. chopped coarse red bell pepper
1/4 c. chopped capers
1/4 t. salt
1/2 t. dry dill
1/4 t. white pepper
1/4 t. garlic powder
scant pinch cayenne pepper

Boil water, add salt and orzo and cook for 5-8 minutes or til orzo tender. Drain and toss with olive oil in a bowl. Add spinach and all other ingredients and mix well to coat. Adjust seasonings to liking.
