Good Morning Everyone!

It is a beautiful day again in Central Florida and I am hurrying to post as Mom and I want to get an early start out to Plant City. We want to browse the antique stores and see if we can find any treasures!

Tonight's dinner is a very simple one and one that brings back childhood memories from living in New York. Mom would make these delicious huge meatballs and serve them with a dollop of tomato sauce alongside rice and green beans. I always thought it was a little strange as my American playmates would usually have their meatballs with pasta. But to Cubans, the only time we ever saw pasta was egg noodles floating in chicken soup or in a savory baked ham and ziti pasta casserole. Our starches came from rice and tuber vegetables.

Nevertheless, when my husband saw the menu on the fridge, he asked, "what am I in for, give me an idea"...I simply explained to him to pretend he is getting an individual meatloaf in the shape of a ball. He liked that!!

My Mother's Meatballs

1 lb. ground sirloin
1 onion, chopped coarse
1/2 green bell pepper, chopped and seeded
2 cloves garlic
1/4 c. fresh chopped parsley
1/4 c. grated Parmesan cheese
1/2 c. bread crumbs
1 egg, beaten
1 t. salt
1/2 t. black pepper
1 t. Italian seasoning
1/4 t. oregano
2 T. olive oil
In a food processor, process onion, bell pepper, garlic and parsley. Mix meat with processed veggies in a large bowl. Add armesan, bread crumbs, egg, salt, pepper and herbs. You can add a little water if too dry. Shape into meatballs and brown in olive oil. Serve with a dollop of your favorite brand of bottled tomato sauce.
