Hi Renee,

Mom and I had a swell time antiquing...she found a nutmeg grater and a serving spoon and I found a Charm Blue Fireking dessert bowl to add to my collection. I also found 2 small pyrex refrigerator storing containers for $2.00 each; now that's cheap! I like the old glass ones for storing leftovers instead of plastic. Red sauce stains the plastic...

Anyway, here's Mom's old fashioned Cuban "Macarones con Queso". That's Spanish for Macari and Cheese. It is an awfully tasty dish, comfort food and especially easy to make.

Macarones con Queso

serves 6

3 garlic cloves, crushed
1/4 t. cumin
1 t. oregano
3 T. olive oil
1 med. onion, chopped
1 reg. size can of stewed tomatoes
1 reg. size jar of favorite spaghetti sauce (We use Barilla)
1 small can tomato sauce
2 c. cut up ham
1 reg. box ziti macaroni, cooked according to directions and drained
1 c. parmesan cheese
Velveeta slices to cover casserole

Saute the onion, garlic and spices in olive oil til tender. Add the can of stewed tomatoes and juices and break up with a fork. Add the spaghetti sauce and can of tomato sauce and the ham and cook on med. low for about 20 minutes for flavors to blend together. Mix macaroni with ham mixture together and layer a 9x13 pan with this. Sprinkle the parmesan all over and then layer the slices of Velveeta to cover. Put in oven at 350 for 15 minutes till cheese gets bubbly.
