If you like cauliflower--you'll love this-- 1 head of cauliflower- cleaned and broken in med pieces 1 cup diced onion 4 cloves garlic- smashed 3 tbls olive oil 2 cups peeled, seeded and crushed tomatoes 2 bay leaves 1 tsp (or so ) salt pinch of red pepper flakes parmesan cheese
Heat oil in large pan- Add onion and garlic and cook till transparent Add cauliflower, bay leaves and red pepper flakes and salt. Cook 5 minutes- stirring occasionally Add tomatoes and cover- simmer for about 20 min After 20 min take off lid and allow to cook about 10 more min (till cauliflower cooked thru). Most liquid will evaporate- leaving just enough to cover and coat cauliflower. Place in dish and sprinkle with parmesan cheese.
