I feel a breeze in the air, it has been quite lovely since yesterday with breezes allowing one to enjoy the outdoors again!
Tonight we will enjoy a light and easy dinner...
Spinach and Mushroom Quiche Orange Ginger Muffins Fruit Cup Dusted with Powdered Sugar

Spinach and Mushroom Quiche 6-8 servings
1 9 inch deep dish pie shell 1/2 c. chopped onions 1 10 oz. pkg. frozen chopped spinach, thawed & drained 1 c. chopped mushrooms 2 T. butter 1 garlic clove, minced 5 eggs, beaten 1 c. whipping cream 1/2 c. milk 1 c. grated swiss cheese salt and pepper to taste butter
Bake pastry shell at 375 for 10 min.
Saute onions, mushrooms, garlic in butter. When onion is golden, throw in spinach and blend well in skillet. Set aside. In a bowl,combine eggs, cream, milk, cheese (reserve a nbit for sprinkling on top), salt and pepper. Add spinach mixture and blend well. Pour into the crust, sprinklee reserved cheese, dot with butter and bake at 375 for 30-40 min. or unts out clean. Cool 10 min. before serving.
Orange Ginger Muffins Recipe By: Houston Chronicle-1/20/99 Serving Size : 12
1 3/4 cups flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1/2 teaspoon salt 1 medium orange 1/2 cup softened butter or margarine 3/4 cup sugar 1 egg 1/2 cup orange juice 1/4 cup finely chopped crystallized ginger
Preheat oven to 375 degrees. Combine flour, baking powder, soda, and salt; reserve. Finely grate zest from orange to make 2 tsp.; reserve. Peel orange, discarding rind and white pith. Finely chop orange, removing seeds; set aside. With electric mixer, beat butter and sugar until light and fluffy. Beat in egg. Stir in reserved orange and zest. Beat in reserved flour mixture alternately with orange juice, ending with flour. Fold in ginger. Divide batter among muffin cups lined with paper-liners filling almost to the top. Bake 18-20 min. or until pick inserted in center comes out clean. Remove from pan; cool on wire rack.
Fruit Cup Dusted with Powdered Sugar serves 2
Mix in a bowl the following fruits and drizzle orange juice over so that bananas and apples don't turn brown.
sliced bananas chunks of honeydew grapes chunks of apples chunks of pineapples
Serve in individual cups dusted with powdered sugar.
