Hi Everyone!
Today I went strawberry picking with Mom and it was such a gorgeous day...the weather was breezy and sunny and the berries, oh those luscious red berries!! They were huge and oh soo sweet. I decided not to make straberry jam this year. Instead we hauled our juicy treasures home and rinsed them under a cold running spray of water in large colanders. We hulled and sliced them while listening to music. We then "put them up" by packing them in freezer quart bags. Our pickings yielded 18 quarts, so I think that's enough til next year. I will definitly return to that strawberry farm next year!
Tonight for supper we enjoyed a delicious omelette filled with sauteed sweet red bell peppers, garlic, spinach, mushrooms, ham and fresh spinach leaves. It was seasoned with slat, pepper and herbs de provence. I then grated fresh monterey jack cheese over before flipping it. We later enjoyed sliced fresh strawberries with whipped cream. These berries needed no sugar...they are fabulous!!
Happy Spring Day!! Gina
