Simple Homemade Pudding
1 cup milk 1/4 cup sugar 1 1/2 tbls potato starch 1 egg yolk 1 tbls butter 3 drops of vanilla extract
Heat milk in small sauce pan at low heat until bubbles start to form around the edges. Add to sugar and cornstarch. Return to sauce pan and cook on low until thickens. Beat egg yolk and add to mixture, cook for about 1 minute on low. Remove from heat and add butter. Cool at room temperature and add vanilla. Serve as pudding or in crepes or add fruit. Kids love it.
