Debbie, this is the recipe for carrot cake bars and are my son's favorite.
CARROT CAKE BARS
2 cups flour 2 cups sugar 2 tsp baking powder 1 tsp cinnamon 1/2 tsp baking soda 3 cups finely shredded carrots 1 cup vegetable oil 4 eggs 1 cup chopped pecans
In a large mixing bow, stir together flour, sugar, baking powder, cinnamon and baking soda. Add carrots, oil and eggs. Beat with mxer till just combined. Stir in pecans. Pour mixture into a greased 13 x 9 inch pan. Bake 350 degrees for 40-45 minutes or till toothpick comes out clean. Cool cake in pan on a wire rack. Spread frosting over cooled cake. Cover and store in refrigerator.
CREAM CHEESE FROSTING
2-3 ounce pkgs cream cheese, softened 2 tsp vanilla 4 to 4 1/2 cups powdered sugar In medium mixing bown, beat together cream cheese and vanilla till light and fluffy. Gradually add 2 cups powdered sugar, beat mixture well. Gradually add 2 to 2-1/2 cups powdered sugar till mixture is spreadable. Makes 1 1/2 cups
