I have been making this recipe for years and it is so quick and easy since it uses ground beef. To go with the salisbury steak, I will fix buttered noodles and Lawry's creamed spinach. Lawry's is a famous restaurant in Chicago noted for its prime rib. Lawry's seasoning salt is by the same company.
SALISBURY STEAK
1 egg 1/2 cup dry bread crumbs 1/2 cup tomato juice 1/2 onion, chopped fine 1 pound ground beef 1 envelope French's Mushroom Gravy mix 1 cup water Combine first 5 ingredients. Shape into 4 oblong patties, brown in skillet. (If using very lean meat, will have to add some oil to skillet). After browning both sides, combine gravy mix and water, stirring till smooth. Add gravy to skillet, cover and simmer 10 minutes.
Leftovers are good reheated in microwave and served as sandwiches the next day.
LAWRY'S CREAMED SPINACH
1 pkg (10 oz) frozen chopped spinach 2 slices bacon, finely chopped 2 Tablespoons flour 1 teaspoon seasoned salt 1 clove garlic, minced 1 cup milk
Cook spinach according to package directions. Drain well. Fry bacon and onion together till onions are tender. Remove from heat. Add flour, salt and garlic. Blend thoroughly. Slowly add milk, return to heat and stir till thickened. Add spinach and mix thoroughly. Serves 4
Note - If time is short, I skip the cooking of the spinach - just defrost and squeeze till dry. I always have to double this as my kids love it.
