Terrie, wow, all of your recipes sound great and thank you again for posting them. I made the crabmeat stuffed shrimp (delicious), wild rice casserole and buttered green beans. While the wild rice casserole was delicious, I think it overpowered the shrimp. It would be perfect with chicken, pork or beef. For dessert, I made a new chocolate chip cookie recipe which are a little crispy rather than chewy but they too are worth trying - very good.
WILD RICE CASSEROLE
6-oz box Uncle Bens White & Wild Rice Mix 1/2 cup chopped celery 5-oz can water chestnuts (drained & sliced) 1 small can mushroom pieces (drained) 4 tablespoons margarine or butter 1 tablespoon soy sauce
Cook rice according to directions on box. Cool. Add remaining ingredients. Bake in buttered, covered casserole dish at 350 degrees for 45 minutes.

4-1/2 cups flour 1 tsp salt 1 tsp baking soda 1 tsp cream of tartar 1 cup butter, at room temperature 1 cup light brown sugar 1 cup granulated sugar 1 cup vegetable oil 1 tsp milk 1 tsp vanilla extract 1 egg, lightly beaten 1 bag (12 oz) chocolate chips 1 cup chopped walnuts
Preheat oven to 350 degrees. Sift together first 4 ingredients, set aside. In large bowl with mixer at high speed, beat butter until smooth. Add sugars and beat until combined. Reduce speed to medium, beat in next 4 ingredients until combined. Reduce speed to low, beat in flour mixture until combined. Stir in chocolate chips and walnuts. Drop by 2 tablespoons (I made mine smaller), 2" apart onto ungreased baking sheets. Bake 15 minutes (or a little longer till just lightly golden brown). Cool in pans on rack 1 minute. With spatula, carefully remove from pans, cool completely on racks.
