Hi all....
I have been reading all of your wonderful posts for months now but have never had anything that could compare....well, now I think I may have stumbled onto something. I was in the mood for oil and garlic with pasta and my dh said "not for me" so he went to get a pizza. Well, when he returned and realized what I had mixed up he wanted that instead! Here it is, I hope some of you will enjoy.
Chrissy's Oil and Garlic with a Little Something Extra!
Saute in oil, minced garlic and 1 chopped tomato Add fresh spinach and cook until it is wilted Add three slices of proscuitto, cut into pieces Season with salt, pepper, oregano and I used some of Emeril's Essence (I'm a big fan!)
I cooked very thin penne, and when it was al dente I added it to the saute pan with the sauce, tossed it, and served it with some fresh asiago cheese! It really was delicious!
I accompanied it with a fresh spring salad with balsamic dressing. It was really great.
