We got home yesterday afternoon after a week at our lake home with our grand kids. The weather was good and those darling kids were a delight!
I had to come up with something quick and easy for dinner (no time for defrosting). Thought I would share since everyone has THOSE kind of days at some time. It's just a little different twist to an old favorite...
Country Chicken or Tuna Stroganoff Casserole
1 can cream soup of choice (we like mushroom) 1/2 cup sour cream 3/4 cup milk 1/2 cup mayonnaise 1 (4 oz.) can mushroom stems and pieces, drained 2 (7 oz.) cans chicken or tuna, drained and flaked 1 cup grated cheddar cheese 2 Tbsp. parsley (fresh if you have it or dry equivalent) 1/4 tsp. pepper 1/2 tsp. onion salt 1/4 tsp. garlic powder 1 Tbsp. lemon juice 3 cups cooked noodles
Combine all ingredients, mix well. Pour into 1 1/2 quart shallow baking dish (greased). Top with crushed potato chips. Bake 45 min. at 350 degrees. Top with extra grated cheese the last 15 minutes of baking.
I served this with a tossed salad and French Bread -- Couldn't be easier.
Anyway, I'm glad to be back. I was lurking from the laptop after the kids got to bed but didn't have time to post. Sounds like many of you had a lovely 4th of July Holiday also.
