Last night DH brought home a friend from work to watch the All Star game. I was just planning on having hamburgers until I found out we were having company. I made Gina's inside out burgers and Carol's onion rings and they were both a hit! Thank you!!

1 lb. ground sirloin 1 egg salt and pepper to taste 1 tsp. Italian seasonings 2 Tbsp. olive oil 1/2 red or green bell pepper, chopped 1/2 medium onion, chopped 2 Tbsp. sun-dried tomatoes strips in oil (found in large bottle at Costco) 2 crushed garlic cloves mozzarella or cheddar cheese (for tops)
In a large bowl mix beef, egg, salt and pepper and Italian seasonings. Make 6 flat patties as you will use two to make 1 burger with the filling inside.
In a skillet, heat the oil and saute the chopped veggies except the garlic. When the veggies are limp and onions are golden, throw in the garlic and cook for 1 more minute. Cool veggies slightly and mound 1 1/2 T. on a patty and top with another patty, seal edges and make as round as possible. Fry them in the same skillet with a little bit of olive oil if needed. Fry on one side for 5 minutes, flip and cook for another 5 minutes. When almost done, top with mozzarella or cheddar slices. Delicious!!

This time I am going to put shredded cheddar inside them and omit the tomatoes for mushrooms.
1 garlic clove, minced 1/4 cup yellow onion, peeled and finely diced 1/4 cup tomato, finely diced (or mushrooms) 1/4 cup green pepper, finely diced 1 teaspoon dried oregano salt and freshly ground black pepper to taste 1 pound lean ground beef 1 egg 3 tablespoons extra-virgin olive oil 2 large yellow onions, peeled and thinly sliced cheddar or American cheese, shredded; slices for top
In a medium bowl, combine the garlic, diced onion, tomato, green bell pepper, and oregano. Add the salt and pepper, and mix well. Saute all veggies except the sliced onions till veggies are limp. Cool and Cover with plastic wrap and set aside.
In a large bowl, combine the ground beef, egg, salt, and pepper. Shape into eight 4-inch round, flat patties. Place a spoonful of the vegetable filling in the center of one patty, top with shredded cheddar or American cheese, then top with a second patty, press down firmly, and shape into a round, carefully sealing the sides by pinching together. Repeat with the remaining patties.
In a large nonstick skillet, heat the oil over medium-high heat and sauté the sliced onions until lightly brown. Transfer to a bowl and keep warm. . Brown the hamburgers for about 5 minutes on each side, or until cooked to medium; you may top with a slice of cheddar or American cheese. Return the onions to the pan and heat. Serve immediately. I serve this alongside a salad....very filling.

2 large onions, peeled (about 1 1/2 pounds), cut crosswise into 3/4-inch thick slices 2/3 cup all-purpose flour 1/2 tsp salt 1/4 tsp freshly ground black pepper 1/4 tsp paprika 1/3 cup flat beer* 1 large egg white, lightly beaten 1 1/2 tablespoons vegetable oil, divided cooking spray 1/4 cup ketchup
Preheat oven to 400 degrees.
Separate onion slices into rings and select 16 of the largest rings. Reserve remaining onion for another use (I keep using the rings until the batter is gone).
Combine flour, salt, pepper, and paprika in medium bowl. Stir in beer and egg white (batter will be thick).
Heat 1 1/2 tsp oil in large non-stick skillet over medium-high heat.
Dip onion rings in batter, letting excess drip off. Add onion rings to pan; cook for 2 minutes on each side or until golden. Place the onion rings on a jelly roll pan. Coat the onion rings with cooking spray.
Bake at 400 degrees for 10 minutes or until crisp. Serve with ketchup.
*To make beer flat: measure 1/2 cup beer into a small bowl and stir it with a fork. You are left with about 1/3 cup flat beer.
