Here's my menu for this week. Making my menu helps me save $$ at the grocery store and I am not forever saying at 4:00pm "I forgot to take something out of the freezer for dinner!"
Thurs - Chicken Enchiladas - 1/2 will be Creamy Chicken Enchiladas from bhg.com and other half with be kind of a burrito/enchilada with refried beans, Salad.
Friday - Meatball subs w/Provolone - I have frozen leftover meatballs - can anyone suggest a side dish?
Sat - Going to a potluck cookout and bringing spinach, strawberry and mandarin orange salad dressed with Citrus Splash dressing (Heinz? Cains?), Crockpot of meatballs and finger rolls and a Van Gogh Cake (e-mail me for this easy, pound cake-like recipe).
Sun - Fried Chicken breasts, rice, green beans, gravy (cannned)
Monday - Egg Salad Sandwiches and oven fries
Tuesday - Chili (crockpot) and cornbread (may switch w/next friday if too hot outside)
Wed - Family Birthday party - Making cake (not sure which) and Crock Pot Pizza from Taste of Home magazine (have not tried this yet)
Thurs - Leftovers, probably in the form of a Chili and Tortilla Torte w/cheese
Friday - either grilled steak and kielbasa or Beefy mac n cheese.
I will try to post my menus each week and I hope to read yours too! I am ALWAYS in search of new ideas and quick, healthy dinners.
