Hello all....I fixed baked Pork Chops, Garlic Roasted Mashed Potatoes, Early green peas, Fried Green Tomatoes and Rolls for dinner last night. Fried green tomatoes are a Southern favorite this time of year. My husband enjoys these fried with fresh okra.
Fried Green Tomatoes
3-4 med. green tomatoes 1/3-1/2 cup white cornmeal salt and pepper vegetable oil(I use Wesson)
Slice tomatoes in rounds. Dredge in cornmeal seasoned with salt and black pepper. Cover skillet bottom with oil. Make sure that oil is hot before you place the tomatoes in the skillet. When the egdes are brown, the underside is usually nice and golden brown, then you tun the tomatoes over. I usually salt the tomatoes again after I put them on a paper towel to drain. These are good with fresh peas and corn.
