I broke a "rule" at our house this Friday because I cooked!
Our daughter has been living on Jello, yogurt, and chicken noodle soup since having her wisdom teeth extracted on Wednesday. She has done really well with the surgery, but she has caught a summer cold!
Since she hasn't been able to eat, we have just had sandwiches, fruit, yogurt, etc. I went grocery shopping today and bought some wonderful Italian link sausages. I thought about making Italian sausage and pepper sandwiches. It isn't an authentic Italian dish, but it was certainly good!
ITALIAN SAUSAGE AND PEPPER SANDWICHES--ALABAMA STYLE
4-6 Italian sausage links (hot or mild) 1 red bell pepper, washed, seeded, and cut into strips 1 yellow bell pepper, washed, seeded, and cut into strips 1 Vidalia onion, sliced into rings 2 tbsp. olive oil 2 tbsp. minced garlic 1 can Swanson's Onion Beef Broth 4-6 submarine sandwich rolls 1 cup shredded mozzarella cheese
Put the sausages into a non-stick pan along with 1/2 of the can of beef broth. Cook on low for 25-30 minutes or until sausages are done.
In a microwave-safe bowl, put the peppers, onions, olive oil, garlic, and 1/2 of the can of beef broth. Microwave on HIGH for 5-7 minutes or until onions are transparent.
When sausages are done, remove them from the skillet and place them on paper towels. Pat them to remove excess grease.
When vegetables have sauted, drain them and place in a serving dish.
To make each sandwich--place a sausage link in the submarine sandwich roll. Top with vegetable mixture and top this with mozzarella cheese.
We had these sandwiches with potato chips, watermelon chunks, sweet tea with lemon, and peach pie.
