Tonight I will have Pot Roast with baby carrots and Vidalia onions, mashed potatoes and gravy, baby limas, fried squash, yeast rolls, and Banana Split Cake. I will share my Banana Split Cake recipe because it is the best one that I have ever tried. It is a delicious summertime treat.
Banana Split Cake
5 bananas, sliced in rounds 2 sticks (1 cup) butter 2 cups graham cracker crumbs 2 eggs (equivalent in pasteurized egg product) 2 cups confectioners sugar 1 small can pineapple tidbits, drained 1 large carton Cool Whip 3/4 cup nuts(chopped) 3/4 cup maraschino cherries chocolate syrup
Mix 1 stick melted butter and graham cracker crumbs. Pat into the bottom of a 9x13 pan. In a separate bowl, combine 1 stick butter, confectioner’s sugar and the eggs, beat for 15 minutes. Pour over crust. Add layer of sliced bananas, and then pineapple. Top with Cool Whip. Sprinkle with nuts and place cherries over the top. Drizzle with chocolate syrup. Chill 3 hours before serving.
I would like to say that when I first made this recipe years ago, I thought that 15 minutes of beating the egg, sugar and butter was a bit much, but if you don't at last beat it for 10 minutes, it will not look or taste the same. It takes on a white look much like that of vanilla ice cream the longer you beat it. I also have found that if you use the Sundae nuts instead of chopped pecans, it tastes more like a banana split. This is a little expensive to make, but worth the money and effort...hope you all will give it a try this summer.
