This is an old favorite that I haven't made in years - I can't remember the original name but I renamed it when my kids were very young. Since it hhas spinach in it, Popeye came to mind and the kids ate it without a fuss. I served buttered baby carrots, tossed salad and parmesan-garlic bread with it.

POPEYE-BRUTUS CASSEROLE
Serves 6

4 oz medium noodles (3 cups)
1 pound ground beef
1-15 oz can (2 cups) tomato sauce
1 tsp sugar
1/2 tsp salt
1/4 tsp garlic powder
1/8 tsp pepper
1-8 oz pkg cream cheese, softened
1/2 cup sour cream
3 tblsp milk
2 tblsp finely chopped onion
1-10 oz pkg frozen chopped spinach, cooked and drained
1/2 cup (2 oz) shredded cheddar cheese

Cook noodles till tender, about 10 minutes, drain. Brown meat in skilet; drain off fat. Add tomato sauce, sugar, salt, garlic powder, pepper and cooked noodles. Set aside. Stir together cream cheese, sour cream, milk and onion. In 2 qt casserole, layer half of the ground beef-noodle mixture, half of the cream cheese mixture, all of the spinach and remaining ground beef-noodle mixture. Cover and bake in 350 degree oven for 40 minutes or till bubbly. Uncover and spread remaining cream cheese mixture atop; sprinkle with cheddar cheese. Bake 10 minutes more or till cheese is melted. (Can double recipe - serve one now, freeze other for later)

Note - I used 1 cup of shredded Cheddar cheese, 1/2 cup seemed too skimpy.
