While think about spaghetti Sauce, I remembered that my favorite minestrone recipe calls for a piece of parmeson cheese rind to be simmered with the vegetables and later removed. Has anyone ever done that with spaghetti sauce? Seems it might give great flavor to a meatless sauce. Would it make it bitter tasting?
