Another great springtime side dish:
DOUBLE SESAME ASPARAGUS
1-1/2 lbs. fresh asparagus 1 tsp. cornstarch 1 tsp. soy sauce 1 tsp. sherry 1 Tbsp. sesame oil 1 clove garlic, minced 1/2 tsp. ginger 1/4 tsp. salt 1/4 cup chicken broth 1 Tbsp. sesame seeds, toasted in oven at 300 degrees for 10 minutes
Wash and trim asparagus. Slice diagonally into 1-inch pieces.
Combine cornstarch, sherry, and soy sauce.
Heat oil in skillet on medium-high. Add garlic and ginger--cook a few seconds, then add salt and asparagus. Cook a few minutes.
Lower heat to medium. Add broth. Cover and cook 5 minutes. Add soy mixture. Stir and cook a few minutes more. Toss with sesame seeds and serve.
