Today for lunch we had really easy foods to prepare. I was not in the mood for cooking! We had: salisbury steak and gravy, noodles, broccoli with red peppers, pickled beets, sliced tomatoes, buttermilk bread (from the breadmaker), sweet tea with lemon, and Krispy Kreme Doughnuts for dessert.

SALISBURY STEAK AND GRAVY

1 1/2 pounds ground chuck
3 Tbsp. Heinz 57 Sauce
2 Tbsp. minced garlic
1 tsp. seasoned salt
1/2 tsp. black pepper
1 egg

Combine all of the ingredients together. Mix well. Make the meat mixture into 4-6 patties. Place in a large no-stick skillet. Cook until meat is done. Remove the patties from the skillet and place on a plate that has been covered with paper towels.

GRAVY

1 Vidalia onion, sliced thinly
1 red bell pepper, sliced thinly
1 yellow bell pepper, sliced thinly
1 Tbsp. minced garlic
1 pkg. fresh mushrooms, sliced thinly
1 Tbsp. butter
1/2 cup white wine
1 can Swanson's Onion Flavored Beef Stock
2 cans golden mushroom soup

Place the vegetables, butter, and wine in a microwave-safe bowl. Saute the vegetables in the microwave until the onions are transparent--about 7-8 minutes on HIGH.

Remove the bowl from the microwave and add the beef stock and the golden mushroom soup. Do not dilute the golden mushroom soup. Stir together and let simmer in the microwave for 5-7 minutes.

Place the meat patties in a 13x9-inch pan that has been sprayed with PAM. Pour the gravy over the patties. Cover the pan with aluminum foil. Bake in a 350 degree oven for 45 minutes.

Serve the salisbury steak and the gravy with the noodles.

BUTTERMILK WHITE BREAD
for 1 1/2 pound loaf

1 cup + 2 Tbsp. buttermilk
1 1/2 Tbsp. butter
2 Tbsp. sugar
1 1/4 tsp. salt
3 1/4 cups bread flour, unsifted
1 1/2 tsp. active dry yeast.

If your bread machine doesn't have a preheat cycle, heat buttermilk in microwave on HIGH for 30 seconds (or heat in a saucepan for 1 minute to 80 degrees F). Add to the bread pan with remaining ingredients, according to the manufacturer's directions for your machine. The cycle should be set on everyday breads, the loaf size for 1 1/2 pounds, and the crust setting should be set for light. Press start.

After about 5 minutes of kneading, check the consistency of your dough. If dough is not in smooth, round ball, open lid and with machine ON add liquid a tablespoon at a time if too dry, or add flour a T. at time if too wet.

Remove the bread promptly from the pan when the machine beeps or on completing the cycle. Cool on rack before slicing.

*****If you don't have buttermilk, you can make your own. Just measure 1 Tbsp. of vinegar, or lemon juice, into a measuring cup, then add regular milk to the measure of buttermilk that you need. Let the mixture stand for 5 minutes to curdle; then use in a recipe.
