Gladys, I hope things go better for you soon. IN the meantime, these are the cookies I keep in the freezer for when I need to "self-medicate!"
Ginger Cookies - about 4 dozen
3/4 cup shortening 1 cup brown sugar 1 egg 1/4 cup molasses 1/4 tsp salt 1 tsp ground cinnamon 1 1/2 tsp ground ginger 1/2 tsp ground cloves 1 tsp baking soda 2 1/4 cups flour
Cream together the shortening, brown sugar, egg, and molasses. Sift in the remaining ingredients. Chill the dough at least 2 hours. Roll the chilled dough into 1" balls and roll in granulated sugar. Place 2" apart on a cookie sheet and bake at 325 for 10 - 15 minutes. The dough keeps well in the freezer, as do the baked cookies. The baked cookies keep well in an airtight container on your counter - as long as they are hidden! My family gobbles them up, so I have to hide my stash in the freezer.
