Tonight I will have Coca-Cola Pork Chops, twice-baked potatoes,green sweet peas, dinner rolls and an easy Peach Cobbler for dessert. I have also used cola in my pot roast before. It really tenderizes the meat. The mixture will not look appealing once you get it all in the pan, but once simmered down, this will make a barbecue-like sauce that is sensational and the pork chops will be ao tender, they'll practically fall apart.

Coca-Cola Pork Chops

6-8 pork chops
(12 to 16-oz. Coca-Cola
1 large onion
3 Tbsp. prepared mustard
6 Tbsp. ketchup
dash of pepper
1 can sliced mushrooms(or fresh)
dash garlic powder

Brown the pork chops on both sides. Drain. Slice onions and stir fry. Drain. Pour Coke and other ingredients in the skillet. Add the pork chops and onions back to the skillet. Simmer on low with a lid for 30-45 minutes until liquid is evaporated and a thickened sauce has formed. Serve over rice if desired.

Easy Peach Cobbler

1 cup milk
1 cup sugar
3/4 cup self-rising flour
apple pie spice (or cinnamon)
1 stick (1/2 cup) melted margarine
1 large can sliced peaches

Mix milk, sugar, flour, apple pie spice and melted margarine together. This will be lumpy. Add peaches in the syrup they came to this mixture. Bake about 45 minutes-1 hour on 400 degrees. This is good served warm with vanilla ice cream.

I use my microwave to make the twice-baked potatoes. It is faster that way. I mix sour cream chives or green onions, black pepper and salt with the scooped out potatoes and fill the potato shells with the mixture. I top with shredded cheddar cheese and place back in microwave until cheese is melted. I have used pimentos and crumbled fried bacon in the potato mixture.
