Boy i'm on a roll,ha!All I keep finding is recipes for leftovers so here goes:
Nutty Turkey Pie: Serves 6
1/4 c.butter 1/4 c.flour 1 c.light cream 1/2 tsp.salt(omit if using bouliion cube to make broth) 1/4 tsp.pepper 1 c.chicken broth 1/4 tsp.dill weed 1 tsp.chopped parsley 2 c.cooked diced turkey 1 (4 oz.) can sliced mushrooms,drained 1/2 c.toasted slivered almonds pastry for single-crust 9 " pie
Melt butter & blend in flour.Gradually stir in cream & cook,stirring till smooth & thick.Add salt,pepper,chicken broth,dill weed,parsley & cook till once once more smooth & thick.
Stir in turkey,mushrooms & almonds.Pour into deep 9 " pie plate & cover with pastry.Slash top & bake on cookie sheet in oven preheated to 450 degrees F.for 10 minutes.Reduce heat to 350 degrees F.& bake 15 minutes lo
Turkey Loaf or Ring: (Fill a hot turkey ring with rice or macaroni,a cold ring with fresh salad.) serves 6-8
2 c.scalded milk 2 eggs,lightly beaten 1 c.soft bread crumbs 1/2 tsp.salt 1/4 tsp.paprika 1 tsp.Worchestershire sauce 3 c.diced cooked turkey 1/2 c.chopped celery 1 green pepper ,chopped 1 1/2 Tbls.lemon juice
Pour hot milk slowly in a thin stream onto eggs,stirring constantly.Add remaining ingredients,mix well & pour into buttered loaf pan or ring mold.
Bake at 300 degrees F. until a knife inserted in center comes out clean,45-60 minutes approximately.
The ring will cook in less time than the loaf.Do not overbake.Remove from oven & let stand 10 minutes before unmolding.
Rich Turkey Noodle Casserole: Serves 6
3 c.uncooked medium egg noodles 1 c.cottage cheese 1 c.sour cream 6 Tbls.Parmesan cheese 1 1/2 tsp.salt 1/4 tsp.Tabasco sauce 1/4 c.sliced pitted ripe olives 2 1/2 c.diced cooked turkey
Cook noodles according to package directions.Combine cottage cheese,sour cream,4 Tbls.Parmesan,salt & Tabasco.Stir in olives,noodles & turkey.
Put into greased 2 qt. casserole & sprinkle with remaining Parmesan cheese.Cover & refrigerate.
One hour before serving,place in 350 degree oven & bake,covered for 35 minutes.Uncover & bake for 25 minutes longer.
Turkey Rice Casserole: Serves 6-8
2 c.diced cooked turkey 1 c.sliced celery 2 tsp.finely chopped onion 1/2 c.chopped walnuts 2 c.cooked rice 1 can cream of chicken soup 1/2 tsp.salt 1/4 tsp.pepper 1 Tbls.lemon juice 1/2 c.mayonnaise 1/2 c.water 3 hard boiled eggs,sliced 2 c.crushed potato chips
In a large bowl combine first 9 ingredients.Mix mayonnaise with water tull smooth & add to turkey mixture.Gently fold in egg slices.Put mixture into greased 9" square pan.Bake at 450 degrees for 25 minutes.Remove & top with potato chips.Return to oven for another 5 minutes.Serve
Hot Turkey Salad: (Crunchy & flavorful.For variety,you can substitute 1/2 cup of diced onion & 1/2 cup diced green pepper for the 2 cups of celery.) Serves 6
2 c.cubed cooked turkey 2 c.thinly sliced celery 1 c.mayonnaise 1/2 c.toasted slivered almonds 2 tsp.lemon juice 1/2 tsp.salt 1/2 c.grated cheese 1 c.toasted bread cubes or croutons
Combine all ingredients except the cheese & bread cubes.Pile lightly into greased baking dish.Sprinkle with bread cubes & cheese.Bake at 450 degrees for 20 minutes or till bubbly.Serve.
