Because I decided not to move away from the ironing board today until I had EVERYTHING done, I decided on an easy dinner tonight. We will be having oven barbecued pork chops, steamed redskins (I found some wonderful little potatoes, not much bigger than marbles at the Farmer's Market), green beans almondine, and ice cream if anyone is still hungry.
Oven Barbeque Pork Chops
4 pork loin chops 4 thin slices of onion 4 thin slices of lemon 1/2 cup brown sugar 3/4 cup catsup salt and pepper
Spray a foil lined baking pan with Pam. Brown the chops in a Tablespoon of oil and season with salt and pepper. Place browned chops in prepared baking dish in a single layer. Top each chop with a slice of onion and a slice of lemon. Mix together brown sugar and catsup and pour over the pork chops. Cover tightly with foil and bake at 350 deg. for 1 hour; uncover, baste chops and return to oven (uncovered) for another 1/2 hour. Enjoy - good comfort food and easy clean-up. Have a good evening.
