I will ask my Mom about your request since she is the one that makes all types of rice....I know this much: to make rice yellow you use a product called BIJOL, which tints it yellow. It comes in a wee tin container. The container can be bought for mere pennies at any Bodega or the Latin Food section of a grocer. You only usae a pinch and that container can last you years!!

I am sure Gladys will also give you a yummy recipe from Puerto Rico....
