What do you fix when you are tired, hurried, or just not in the mood to cook? This is my favorite always on hand, we like it, and it's easy, meal. Gets served at least once every two weeks around here. With it, I like a big tossed green salad such as last night with baby lettuces, baby spinach, radishes, jicama, carrots, red bell pepper and cucumber. A loaf of sourdough bread with roasted garlic and a dish of stuffed green olives on the side and we didn't feel a bit deprived. For dessert(a rarity here), earlier in the day I had made Emeril's Meyer Lemon Refrigerator Tarts.
I buy frozen Ravioli in large packages at Sam's and keep in the freezer. They are individually frozen and you can use as many as you need. Be sure the ravioli specifies it can be baked in sauce with out boiling or it comes out gummy. Layer (still frozen) with the marinara sauce (I like the bottled Barilla for this if I don't have homemade in the freezer)in a casserole dish, making sure the ravioli are covered with sauce and bake for about 45 minutes at 375 degrees F. Top individual servings with parmesan cheese. Couldn't be easier and there is time to make a salad and fix the roasted garlic with olive oil and salt, heat the bread, and have a glass of wine while it is baking. What is your favorite easy meal?
