Everyday I try to cook something simple but different. My present quest is to become not only a better cook but a versatile one. Of course, like always, neighbors and friends are grateful that my favorite hobbie is cooking,...and I am too! Let us think that I can manage with Puerto Rico's dishes but I wish I could frequently "visit" other contries. For today I am going to the Rioja Region, where those magnificent spanish red wines are produced. As the region is famous, not only for their wines but also for the magnificent flavour of its sweet red peppers, I will try a pork and pepper combination.
PORK CHOPS WITH SWEET RED PEPPERS Serves 4
2 tb olive oil 4 pork loin chops about 1 inch thick 1 onion well chopped 2 garlic cloves crushed 4 sweet red bell peppers, peeled, seeded and cut into strips 2 medium tomatoes, peeled, seeded and chopped (you can also use a can of tomatoes, drained and the tomatoes chopped) 1 tsp dry oregano leaves crushed salt and ground pepper to taste
Heat the oil in a skillet with a lid. Sear the chops on both sides over medium high. Reduce the heat, add and sauté the onions, add the garlic, crushed oregano leaves, peppers and tomatoes, season with salt and pepper to taste, cover and simmer until the chops are very tender and the vegetables had reduced to a creamy fragrant sauce. Dribble with some extra Virgin Olive oil, for added flavor and fragrance. Serve with mashed potatoes or white rice and with a red LAN RIOJA reserve. Simple and delicious!
