Hi again! Two posts in two days---I just broke my record! Tonight I'm making pizzas on the grill. I love making them this way, because I don't have to use the oven and heat up the house. I'm married to Fred Mertz, (remember I Love Lucy?) who keeps turning the air conditioning up in the summer and the heat down in the winter, and it's a constant race to the thermostat. I undo his settings, he undoes mine, back and forth all year! That's how I get my exercise! :) Anyway, back to the pizzas. Here's how I make them:
Grilled Pizzas
2 Boboli pizza shells Pizza sauce, either homemade or purchased (I purchase!) Italian sausage, cooked and crumbled Black olives, sliced 1 onion, diced 1 green pepper, diced Mozzarella cheese, shredded Parmesan cheese, shredded
Take two round pizza pans, and completelt wrap the bottoms of the pans with aluminum foil. I bring the foil up from the bottom and wrap it around the edges on top. Don't cover the top of the pizza pan, just the bottom. Place a pizza shell on each pan. Use about 1/2 jar of pizza sauce to cover each shell. Sprinkle the sausage, olives, onions and green pepper evenly over both pizzas. (Or use whatever toppings you want. I like to make these with barbecue sauce, cajun-spiced chicken breast meat, onions, and black olives also--it's really good!) Sprinkle each pizza with about 2 cups of mozzarella cheese and 1 cup of Parmesan cheese. Put the pizza pans on the grill, and grill (on a gas grill), low to medium heat, for about 20 minutes per pizza, until the cheese is melted and everything is hot. These are really good done this way. The crust gets nice and crispy, and it's just a good way to eat pizza in the summer! You can freeze one, and eat the other. Serve with a salad, and some rainbow sherbet for dessert, and you've got a nice cool dinner. Hope it's a wonderful day for you! Joansy
