Hi Deb, I've been using this recipe, which is my own concoction for over 40 years. My whole family loves it and it was one of the first requests when I decided to put together a cookbook for the kids. This is just like chicken and noodles, only with beef. Hope you like it.
BEEF AND NOODLES
1 lb Stew Beef 1 lb package wide egg noodles 3 envelopes McCormick Au Jus Gravy mix (I like this brand because it makes three cups per envelope, while all the others only make one cup)
If the stew beef is in pretty large pieces, cut them in half. Brown the meat well in a dutch oven using a little canola oil. Add water to about half the depth of the pan, bring to a boil. Turn down the heat and simmer partially covered for 2-3 hours or until meat is tender, adding water if needed to keep pan about half full. Dissolve the au jus mix in about four cups of cold water and add to the meat. Bring to a boil, stirring constantly. Add noodles, again bring to a boil, turn down the heat so liquid is just boiling and cook until noodles are done to your liking. If it becomes too thick, just add a little more plain water.
