Gladys - The dish was finised about mid-afternoon, so just turned it off and let it sit, supposedly until early dinnertime.

BUT, about 5:15pm, we got a phone call which necessitated our leaving the house until 8:15pm!

When we got home, and warmed everything back up, I was amazed at how moist that pork roast STILL was - I've complained here before about how dry all my pork roasts have turned out for many recent years, but this one reminded me of the old kind that just fell apart and were juicy & moist. DH said this one reminded him of the ones his mother used to make when he was a kid, back before they bred all the flavor and fat out of pork.

I'm very happy with my new "toy"!
