I haven't tried this recipe yet, but my younger son (home sick from school today) and I saw it made on a tv cooking show, and we are intrigued.
He and I are definitely going to try it! Apparently, when the xtra firm tofu is crumbled, it has the consistency of feta cheese.
We are always looking for good ways to eliminate fat, and add soy to our diet. There is a bit of soy milk in the crust of this pizza too (although I think we might go with a more traditional tomato sauce on the crust; our tastes tend more toward the savory, not the sweet, around here).
Also, the dough cycle on the bread machine is as good as it gets, for pizza dough, methinks...
Also of note, for those of you who missed this item in the news last week: the longest life expectancy in the world is in a suburb of Vancouver called Richmond. This area, for those of you who might not know, has a HUGE Asian population, the biggest in our area. I work on the principle that they know something I don't know; look out soy, here I come!
Mickey’s Mystic Chinese Tofu Pizza (Vegetarian or Meat)
For Pizza Dough: 160 ml Superior unsweetened soy drink 250 g bread flour 20 g oil 10 g yeast 10 g sugar Pinch of salt
For Vegetarian Pizza Toppings: 1/2 package Superior organic extra firm tofu 5 pcs dried Chinese mushroom 50 g snow peas 50 g baby corn 30 g red pepper 30 g green pepper 30 g water chestnut 60 ml hoisin sauce
For BBQ Meat Pizza Toppings: 1/2 package Superior organic extra firm tofu 100 g roast duck 100 g BBQ pork 50 g red onion 30 g yellow pepper 20 g green onion 60 ml hoisin sauce
For Pizza Dough:
1. Sift flour into a bowl
2. Mix yeast and sugar in a small bowl and add 50 ml of soy drink until the yeast ferments
3. Make a well in the centre of the flour. Add the yeast mixture and the remainder of the soy drink and oil. Knead firmly until smooth and free from stickiness
4. Cover dough with a cloth and leave in a warm place until it rises and doubles in size
5. Shape into a ball, and proof again
6. Once the dough is ready, shape and roll it to form a large pizza crust
For Pizza Toppings:
1. Spread hoisin sauce on homemade pizza dough. Use a store bought crust if you have to save time
2. Depending on the type of pizza you want to make, place vegetarian or meat pizza toppings on the dough. Sprinkle on top with crumbled extra firm tofu
3. Bake in the oven at 350°F for 20 - 25 minutes (On the show they made a small of each kind of pizza with the dough recipe...they sure looked delish!)
